Assistant Manager, Food Safety - 028770

Position Summary: 

  • Assistant Manager, Food Safety leads cross-functional team for the development and sustainability of prerequisite programmes and HACCP plan, as well as involves daily implementation of all HACCP monitoring, documentation, calibration, record reviews and verifications in accordance with departmental set service standards.

Primary Responsibilities:

  • Demonstrate reliability on completion of tasks, attendance and punctuality
  • Coach all Food and Beverage staffs regarding the implementation of food safety programmes after trainings
  • Coordinate and conduct internal food safety trainings to other related parties, e.g. Receiving and Warehouse, Stewarding, Engineering etc.
  • Regularly organize and conduct internal kitchen inspection and food safety system audit
  • Assist in raw materials monitoring and verification to assure compliance with local regulations, GMP & food safety standards
  • Maintain HACCP documentation, keep and file records in a systematic manner 
  • Assist in monthly reports on HACCP related programmes
  • Assist HACCP Committee members to plan, organize, implement, monitor and review food safety programmes
  • Conduct and co-ordinate all hygiene inspections by Macau Government or external auditing parties
  • Assure corrective actions resulting from internal food safety programmes & external food safety concerns (i.e. consumer complaints / legal regulators) are completed and executed in a timely manner
  • Adhere to all Company policies and procedures
  • Report accidents, injuries and unsafe work conditions to supervisors
  • Capable to perform repetitious duties
  • Ensure highest standard of hygiene is maintained by following HACCP guidelines at all times
  • Perform other reasonable job duties as assigned by supervisors from time to time
  • Coordinate with culinary and service staffs to implement improvement to daily operations


  • 3 – 5 years working experience with minimum 2 years in Supervisor position
  • Degree holder in Food Safety / Hygiene or equivalent professional training
  • Must be able to work indoors and be exposed to various environments such as, but not limited to noise, dust, fragrances and cooking fumes
  • Valid Macau ID card holder for local application
  • Following the correct safe manual handling and lifting techniques
  • Ability to move, lift, carry, push, pull and place objects weighing less than or equal to 15 kg on frequent basis without assistance
  • Ability to move, lift, carry, push, pull and place objects by following the correct safe manual handling and lifting techniques with the assistance of a 4 wheel trolley
  • Ability to stand and/or walk for an extended period of time during the shift
  • Ability to work on flexible shift including overnight, weekends and holiday on rotation basis
  • Good command in both written and spoken Cantonese / Mandarin / English
  • Ability to work under pressure and meet deadlines
  • Computer literate in Microsoft software (e.g. Word, Excel, PowerPoint, Outlook)
  • Knowledgeable in HACCP or ISO 22 000
  • Excellent interpersonal / presentation skills are preferred
