Sous Chef – Western

Job Description

  • Ensure that high efficiency and required standard of food production in all categories are achieved by good delegation and proper supervision

  • Check regularly on conditions of tools and machineries and report immediately back to Executive Chef in order to prevent interruption to the kitchen’s operation

  • Be creative and always has new ideas and developing new menus

  • Develop and test new dishes and products

  • Ensure no food borne illness happen in your sections. All food provided to guests must be of good nutrition and in conditions of absolute sanitation

  • Develop new ideas in conjunction with Executive Chef who will increase sales and reduce cost and better working methods

  • Be responsible for the quality of all food prepared in the kitchen he supervises. Constantly inspect taste, temperature and visual appeal. Make sure that all dishes are uniform and that established portion sizes are adhered to

  • Control standards of food production and presentation throughout the hotel

Job Specification

  • Secondary school graduated or above

  • Minimum 6 years of experience in F&B in a 5 star environment

  • Knowledge of Western or Portuguese cuisine

Chef de Cuisine- Portuguese Cuisine

Job Description

  • Ensure the required efficiency and standard of food production by allocating work to associate accordingly.

  • Check quality of raw materials before use, and oversee quality production of menu items.

  • Ensure adequate supply of raw materials by checking stock level regularly and prepare requisitions for supplies.

  • All food provided to guest must be hymenia and of good nutrition.

  • Plan the weekly specialties and daily banquet menu based on availability of stock on hand.

  • Recommend the right price for every dish based on the specific standard food cost.

  • Maintain complete record on maintenance of all kitchen equipment and fixtures and liaise with the Engineering on their repair.

Job Description:

  • Be responsible for leading the marketing projects from planning to execution in order to enhance the brand image as well as increasing brand awareness of the company’s properties in the targeted markets.

  • Develop, manage and execute marketing projects / plans based on the given marketing budget, and ensure that the delivery meets with the timelines, costs, quality and standards.

  • Work closely with the internal business units and retail tenants to create promotional plans, and to maintain a good leverage between the marketing resources and budgets.

  • Work closely with the internal users and external production partners on designs and productions. Also, supervise and manage the external partners to ensure the quality of projects and that they are delivered within budgets and timelines.

  • Provide brand guidance for all internal and external users to ensure brand consistency across all marketing and communication channels.

Job Specification:

  • Holder of degree in marketing, media studies, or communications studies; major in Communications, Advertising, Journalism, English or a similar area is preferred.

  • At least 5 years of experience in the field of Marketing
